Broccoli Rice Casserole

Broccoli Rice Casserole

This recipe is a great way to use up leftovers! Add or delete veggies to suit taste.

3 cups cooked rice

2 carrots,peeled and coined

(or 1 bag frozen vegetable medly)

1/2 head broccoli, chopped into bite size pieces

1 can cream soup ( I use crm of mushroom)

1/2 can milk

2 cups cooked meat (chicken,turkey,or ham)

1/2 cup diced process cheese (velveeta)

1. Cook veggies in boiling water until crisp tender.

2. Combine all ingredients in a large mixing bowl.

3. Pour into lightly greased 9x13.

4. Bake at 350 for 30 minutes.

5. Stir to distribute melted cheese. Serve. Yield;4-6 servings
